Default Engine rebuild

I got a '72 Mustang with the 351 Cleveland sitting on the stand, I'm wanting to rebuild. I can't decide if I want to Forced Induction it or not, but I still need to get it rebuilt, I just don't know who to take it to. Any suggestions would be fine, and if anyone knows anything about an adapter plate so I can get rid of my C6 and through a Tremec back there, that would be great. Thanks all for reading it.

My father has been a mechanic his whole life and has his own shop in Garland. Specializes in Ferraris but works on everything. He pretty much built my 66 from the ground up.
